I recently discovered that National Cheeseburger Day is this Wednesday, September 18th! When I started this blog, I researched all the national food days to feature some of them, and I was amazed by how many foods are recognized. This is definitely one I'm excited about! Cheeseburgers are a regular in our household, appearing at least once a week, or every other week if I'm not on top of things. The moment you've all been waiting for is finally here! This pizza is absolutely incredible; we've had it twice in four days if that tells you anything! Jacob devoured three slices tonight and still wanted more. When planning my weekly menu, I knew I wanted to include a fish entree, and for some reason, fish sticks popped into my head. I'm not a fan of the pre-made frozen versions, so I decided to make my own. I've been making Annie's Eats ' crispy baked chicken fingers for ages, and that recipe inspired me to use a similar technique with a few modifications. The result? One-pot meals are a lifesaver for our busy schedule, and as you can probably tell by now, I'm a big fan! While I do enjoy more involved dishes, I typically save those for the weekend when I have more time to spend in the kitchen. This recipe was incredibly simple to make; I just substituted regular lasagna noodles for the no-boil kind, and it turned out great. This recipe offers a healthier alternative to ground beef and comes together incredibly fast. You can have it on the table in about 30 minutes, even with a toddler demanding attention (trust me, I've been there!). I typically serve these with Funyons or regular chips (please don't judge!). What's your favorite vegetable? We love broccoli in our house, we have it at least once a week. I usually steam it with a little garlic, butter, salt and pepper. While searching for new ways to cook broccoli I stumbled upon this recipe from Smitten Kitchen , if you have not seen her blog I highly recommend it, she is amazing! I have to admit I was a little nervous to make this dish, I was worried it would taste like broccoli soup but I it did not taste that way at all!! This was a very tasty dinner, Jacob and Lucy ate it up!
