French Silk Pie

Image
Although I don't watch much TV these days, I occasionally catch Food Network on Saturday or Sunday mornings. This past Saturday was one of those rare opportunities. Early in the morning, "The Pioneer Woman" was on, and I, being a big fan of her and her recipes, watched her make a French Silk Pie. Immediately, I knew I wanted to try it, especially since Gabe absolutely loves French Silk Pie! What truly intrigued me was her use of a graham cracker crust instead of a traditional pie crust. I was so excited by this! The process is a bit time-consuming, but absolutely worth it. Besides, 20 minutes of mixing isn't a huge deal in the grand scheme of things. I promise you won't regret the time spent once you take that first bite! Ingredients For the crust: 12 graham cracker squares (the large 4 section graham crackers) 1/3 cup unsalted butter, melted 1/3 cup sugar For the filling:  4 oz. unsweetened baking chocolate, melted and cooled 1 cup butter, sligh...

White Chocolate Cherry Shortbread

Image
Cookie Swap season is my favorite, and it's in full swing! I've already signed up for The Great Food Blogger Cookie Swap next year. When I stumbled upon this recipe in the December 2013 issue of Better Homes and Gardens, I knew I had to give it a try. My past attempt at shortbread didn't go so well, so I was a bit nervous. Thankfully, the Better Homes and Gardens website offered a video tutorial that boosted my confidence immensely. These adorable cookies are bursting with flavor and perfect for the holidays. I highly recommend trying them! Ingredients 1/2 cup maraschino cherries, finely chopped and drained 2 1/2 cups all-purpose flour 1/2 cup granulated sugar 1 cup cold unsalted butter, cut into small cubes 12 oz. white chocolate baking squares, finely chopped 1/2 tsp. almond extract 2 tsp. shortening Red Sanding sugar to decorate (optional) Directions Prepare the Cherries: Spread chopped cherries on a paper towel to drain. Prepare the Dough: I...

Homemade Basics: Perfect Pie Crust

Image
For about 15 years, I've been making pies, and it's taken me just as long to perfect a no-fail pie crust. I know pie crust can be intimidating, much like biscuits — if you don't make them regularly, they never turn out the same. I, for one, can't make biscuits to save my life, unlike my grandmother, whose biscuits are legendary! I'm determined to master fluffy biscuits one day, so if you have a recipe, please send it my way via my Contacts Page! But back to pie crust! This recipe is consistently excellent, even if I go six months without baking a pie. I'm excited to share it with a friend this weekend for our "pie date." I'm still deciding what kind of pie to make, but I'm leaning towards chocolate. I'll be sure to share my choice with you all! Ingredients 2 cups all-purpose flour, plus more for rolling 3 tablespoons granulated sugar - if you are making this crust for a savory pie omit the sugar 1/4 teaspoon salt 2 teaspoons lemon ...

Sprinkle Cookies

Image
These sprinkle cookies are simply amazing! While the dough differs slightly from my usual all-powdered sugar roll-out recipe (which I'll share soon!), it's just as delicious, using granulated sugar for an equally delightful result. The sprinkles are what truly make these cookies special, adding the perfect amount of festive cheer without being overpowering. They are absolutely perfect for the holidays! Ingredients For the cookies: 3/4 cup (1 1/2 sticks) salted butter, slightly softened 1 cup sugar 2 eggs, at room  temperature 1 tsp vanilla 2 1/2 cups flour 1 tsp baking powder 1/2 tsp salt For the glaze: 2 1/2 cups confectioners' sugar 1/4 cup water 1/2 tsp almond extract (you could use vanilla instead but make sure it's clear) 3 oz jar nonpareils (your choice of rainbow or holiday!) For Decorating: Assorted sprinkles (your favorite colors and shapes!) Instructions: Prepare the Dry Ingredients: In a medium-sized mixing bowl, thoroughly wh...

My Favorite Chocolate Frosting

Image
I've titled this post "My Favorite" because, in my opinion, this variation is the best I've ever tried! You might recall that last week I featured my "My Favorite" pizza crust recipe . Out of the five or so recipes I've experimented with over the years, that one truly stood out as my ultimate favorite. I hope you'll trust my taste buds and give these recipes a try! This particular chocolate frosting recipe earned the title "My Favorite" because of its incredibly creamy flavor and silky texture. It's perfectly balanced—not overly sweet or intensely chocolaty—possessing all the qualities I look for in a chocolate frosting. It would undoubtedly be the highlight paired with any cupcake flavor you can imagine! Ingredients 12 oz.. cream cheese, softened 1 11/2 sticks unsalted butter, at room temperature 4 1/2 cups confectioners' sugar 1/2 cup cocoa powder Pinch of salt 18 oz. bittersweet chocolate, melted and slightly cooled...

Funfetti Cupcakes

Image
Who loves funfetti? I do! These cupcakes are incredibly cute and a joy to bake. Much like the Whipped Vanilla Buttercream , their light and airy texture was a delightful surprise. You don't need a special occasion to whip up these delicious treats! You might have noticed some changes around here lately! I'm absolutely loving the new logo, and I'm also in the process of having a brand new site designed. I'm so excited to share it with all of you! I anticipate it will be up and running within the next couple of weeks. Again, I can't thank you all enough for your incredible support. If I could ask one thing of my readers, it would be to leave more comments! Have you tried one of my recipes? Please share in the comments how it turned out and what you thought. Do you have questions about ingredients or preparation instructions? Ask them in the comment section of the specific post. I know you're out there, and I would LOVE to hear from you! Whipped Vanilla Buttercream

Image
I simply adore this frosting! It's incredibly light and fluffy, an unexpected treat for a buttercream. While it takes about 4-5 minutes of whipping, every minute is worth it for such a light and airy texture. I followed Annie's suggestion and paired it with funfetti cupcakes, and I'll be sharing that recipe soon. Next time, I'm thinking strawberry or maybe even coconut cupcakes – the possibilities are endless! Ingredients 1 1/2 cups plus 2 tbsp. (3 sticks plus 2 tbsp.) unsalted butter, at room temperature 3 cups confectioner sugar, shifted Pinch of salt 2 tbsp. heavy cream 1 tbsp. vanilla extract 1/8 tsp. almond extract Directions In the bowl of an electric mixer with the whisk attachment.  Mix the butter on medium speed until creamy.  About 2 minutes.  Add the confectioners sugar to the bowl and mix on low then medium low speed until well combined.  About 2 minutes stopping to scrap the bowl as needed.  Add the salt, heavy cream a...
